Vegan Meatloaf



Ingredients:

4-6 Beyond Meat Patties
3 Mushrooms
Cup of Oat Flour
Vegan Egg/Egg Replacer
Tsp of Cumin
Tsp of Oregano
Tbs of Smoked Paprika
Tbs Onion Powder
Tbs of Garlic Powder
Sea Salt and Black Pepper to Taste
2 Tbs of Ketchup
2 Tbs of Worcestershire sauce
2 Tbs of Tamari (or soy sauce)

Red Glaze Sauce Ingredients:
2 Tbs of Ketchup
2 Tbs of VEGAN Teriyaki Sauce
2 Tsp of Garlic Powder
2 Tsp of Onion Powder
2 Tsp of Oregano
Sea Salt and Black Pepper to Taste

10-15 Mins                              35-45mins                          1hr

Directions:

Preheat oven to 400 degrees F

In a large bowl, combine the beyond meat patties, mushrooms, oat flour, egg replacer, and spice blend. Don't forget to season to taste with Sea Salt and Black pepper. Add the meatloaf mix to a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish. Add Red Glaze Sauce to the top of the Meatloaf and cover with foil and Bake for 15-20 minutes

Remove meatloaf from oven, add more red glaze sauce to the top of the meatloaf and place back in the oven (uncovered/ meaning without foil) for another 15-20 minutes or until the edges look a little crispy

Remove from oven, let the meatloaf rest for about 5 minutes. Slice, add more sauce if desired and immediately eat before someone steals it!!
