Vegan Peach Cobbler
Ingredients:
2 Organic Canned Peaches (My favorite has apple juice instead of syrup)
1 Organic Vegan Pie Dough
1/2 Cup of Organic Cane Sugar
1/2 Cup of Brown Sugar
2 Tsp of Vanilla Extract
1 Tbs of Lime Juice
2 Tbs of Cornstarch
2 Tsp of Cinnamon
2 Tsp of Nutmeg
1/2 Stick of Vegan Butter
Prep Time Cook Time: Ready In:
10-15 Mins 35-45mins 1hr
Directions:
Preheat oven to 350 degrees F
In a large bowl, combine the Canned Peaches (with juice/syrup), sugar, vanilla extract, nutmeg, cinnamon & lime Juice. Melt the Vegan butter in a pot, Add the peach cobbler mix, stir and slowly add in the cornstarch. The peach cobbler mix should become thicker. Keep stirring until the cornstarch is no longer visible.
Roll, Roll, Roll your Dough!
Add your dough to a lightly greased pyrex dish or porcelain ramekin , add the peach cobbler mix on top of the dough, and finish the cobbler by adding more pie dough on top of the peach cobbler mix. Add a little bit of butter or olive oil on the pie dough and place in the oven.
Remove from the oven, Let it rest for just a moment. Add Vegan ice cream on top or eat as is. It's delicious!!
