Vegan Clam Chowder


Ingredients:
2 Cups of Potatoes
1 Cup of Celery
1 Cup of Onions
1 Cup of Carrots
1 Cup of Soy Milk
1 Can of Coconut Cream
1 Cup of Flour
1/2 Cup of Vegan Bacon
3Tbs of Vegan Butter
1Tbs of Basil
1Tbs of Marjoram
1Tbs of Parsley
1Tbs of Oregano
1Tbs of Seaweed Flakes
1Tbs of Sea Salt
3Tsp of Black Pepper
4 Bay Leaves
1-2 Cups of Water
1Tbs of Vegan Fysh Sauce
1 Bread Bowl (optional)
Oyster Crackers (optional)


Directions:

Cut Vegan Bacon into small cubes and lightly fry on Medium heat until cooked. Add Vegan Fysh sauce to the cooked bacon and continue to cook for another minute or so to let the flavors settle in. This Fysh Sauce will help give the bacon an essence of "Clams". Remove bacon from pot and set aside, we'll come back to it later. 

In the same pot add chopped celery, onions, & carrots. Cook until tender and add chopped potatoes. Season your veggies with Basil, Marjoram, Parsley, Oregano, Seaweed Flakes, Bay Leaves, Sea Salt, and Black Pepper. Stir all the flavors together and cover the veggies with water. Let everything cook. 

You'll know that you're ready for the next step when your potatoes are soft.
Add soy milk and coconut cream (don't worry, the flavors are amazing and you don't taste "coconut" at all)

Let's make our Roux. Grab a seperate pot. On medium heat, add vegan butter and whisk in flour (little by little). You want your roux to be creamy so if you find that your roux is too thick, add soy milk to thin it out.

Go back to the Chowder pot. Add a spoonful of roux to the mix, stir the chowder and repeat with another spoonful of roux and stir it into your chowder. Repeat this step until you've added all of your Roux. This helps to thicken the chowder and it's a very important step

Add your vegan Bacon into the chowder, stir on low heat. Taste your Chowder it should be perfect, but if you need to, season with more salt and pepper to taste.

I love eating my "Clam" Chowder in a bread bowl. It reminds me of growing up in the Bay Area... going to Fisherman's Wharf and eating a warm meal. I've been vegan for almost 4 years now and It's amazing that you can still eat what you've always loved without harming another being to do so.
