Vegan Shrimp Scampi
Ingredients:
1 Pkg of Linguine
1 Pkg of Vegan Shrimp
1/2 Cup of Vegan Parmesan Cheese
2 1/2 Tbs of Vegan Butter
2 Tbs of White Wine
1/2 Cup of Fresh Parsley
2 Tbs Garlic
1 Lemon
2 Tsp of Red Chili Flakes
Salt & Pepper to taste
Directions:
Add a pinch of salt to boiling water. Cook Linguine noodles until they are al dente. Drain water and drizzle a little Olive Oil over the noodles to keep them from sticking.
Add olive oil to a cooking pan and grill your shrimp. Season your shrimp with salt and pepper and then add Garlic, red chili flakes and butter.
Deglaze your pan with white wine and then add a generous amount of Vegan Parmesan, the Zest of a lemon, Lemon Juice and Fresh Parsley.
Mix everything in well and Enjoy!
